
When Grandma landed at Ellis Island those many years ago she brought very little with her. One treasure she did pack was her Irish Soda Bread recipe. I hope you enjoy it as much as we do.
Grandma's Soda Bread
4 cups flour
1/3 cup sugar
1 tsp salt
2 tsp baking powder
1 tsp baking soda
1 tbsp caraway
1 stick butter cut up
1 cup raisins
1 1/3 cup buttermilk
2 eggs
Sift together flour, sugar, salt, baking powder & baking soda. Stir in caraway. Cut butter in using a fork. Squeeze flour together. Add raisins. Beat buttermilk and eggs and add to flour mixture. Knead about 25 times shape and bake @350 for one hour.
